I hated Pimento Cheese growing up. Couldn’t stand the smell, taste or thought. I remember my maternal grandmama making it alot and “ewwww” was all I could muster. But NOW—oh what can I say? I eat it almost everyday. But not the storebought stuff. This is still considered “gross”. It always tastes like they use Miracle Whip and, well, my motto is “Just Say No to Miracle Whip”.
Anyway, if you are like me and are an official “Pimento Cheese Head” here is a quick and easy recipe for you.
No measurements are needed really. This is one of those recipes that you just do it how you feel it.
You will need:
2 to 3 cups of shredded Cheddar cheese
1 to 1 and 1/2 cups creamy mayo (NOT Miracle Whip, lol)
1 to 2 (4oz) jars diced pimentos
Salt and pepper to taste
***diced jalapenos and brine (optional)
What To Do:
Add cheese to a bowl. In a separate bowl, add the mayo and pimentos (and sliced jalapeno/brine if using). Mix until creamy. Add the mayo mixture to the shredded cheese. Mix until well combined. Add salt/pepper as needed. Refrigerate for a couple of hours and then enjoy. We eat it on homemade sourdough crackers or as filling for grilled Pimento Cheese Sandwiches.
